To be honest, this has been my childhood fantasy: to eat kaju katli-flavoured cookies. And, as a baker, I decided to bring it to life. The satisfaction of popping one of these into my mouth—ah, the perks of adulthood, right? I feel so powerful by transforming the rich, nutty goodness of cashews into a soft, chewy cookie that captures all the essence of the beloved festive sweet. Each bite of these cookies brings that signature sweetness of kaju katli, paired with a hint of cardamom and a sprinkle of edible silver varak for that touch of elegance. Because festivities are a time for all things glimmer. As we are growing old, I’ve been increasing my experiments with all these traditional sweets. I realize that’s probably because these cookies are not just a dessert; they are a way to share a piece of my culture with others. And, I want to preserve this in ways that are sustainable for the coming generation. While you’re in the process, do not forget to have fun, especially when cutting different shapes for the cookies. Go all out and make things you’ve always wanted to see in a cookie form. From smileys to football, sticks, birds—I’ve tried all shapes. When they come out of the oven, it feels like your drawing with that magic pencil finally came to life! Serving When the cookies are slightly cooled, garnish with a touch of silver varak (edible silver foil) for a luxurious look. Eggless Kaju Katli Cookies

These eggless kaju katli cookies take you back to childhood without any pressure to come back. As long as you have a jar full of them, you can stay there forever 😉

Ingredients

Ingredients

  • 70 g Refined Flour
  • 40 g Cashew Powder
  • 35 g Salted Butter (chilled, cubed)
  • 1/4 tsp Cardamom Powder
  • 50-60 g Condensed Milk
  • Silver Varak (for garnish)

Instructions

  • Preheat oven to 160°C (320°F)
  • Grind cashews into a fine powder.
  • In a large bowl, combine flour, cashew powder, and cardamom powder.
  • Add cold cubed butter and rub until the mixture resembles sand.
  • Gradually add condensed milk, mixing until a soft dough forms.
  • Roll out dough between two mats or parchment papers to the desired thickness.
  • Cut into desired shapes using a knife or a cookie cutter.
  • Bake for 15 minutes or until edges turn golden brown.
  • Allow cookies to cool until warm.
  • Garnish with silver varak for a luxurious look.
