Eggless Ice-Cream Bread

A lot of people have been messaging me, asking for substitutes for ingredients mentioned in my recipes. We’re all running on limited resources, and I understand that not only is going out to procure stuff at this time difficult, but also that being wasteful is absolutely not acceptable. Thus I’m trying to keep the recipes simple, with minimal ingredients.

Like this ice-cream bread that requires only 4 simple ingredients that most people I know may have at home. It’s also a great time to try this recipe because if you’re craving cake with no place to get it from, it serves your craving well. Also it’s one of those recipes where children can be involved from start to end, since it very little chance of going wrong.

WHICH ICE-CREAM TO USE
I have made this recipe with mint-chocolate ice-cream, mango ice-cream, and banana caramel ice-cream in the past, but I had only vanilla ice-cream at home today. It turned out great, however, since vanilla is a really subtle flavor I recommend adding choco chips or top it up with chocolate sauce or nutella like we did. The stronger the flavor of the ice-cream, the more flavor your ice-cream bread will have. 

Ice-Cream Bread

Just 3 ingredients to make a delicious sweet bread using ice-cream!
Makes: One 8-9 inch loaf or round

Ingredients

  • 2 cups Ice-cream (of your choice)
  • 1 ¼ cups All-purpose flour
  • 2 tsp Baking Powder
  • ¼ tsp Salt
  • ¼ cup Chocolate chips/sprinkles  (optional)

Instructions

INSTRUCTIONS

  • Pre-heat the oven to 180 degree C. Line a loaf pan with baking paper or grease with butter.
  • Take out your ice-cream in a large bowl and let it sit out to melt naturally.
  • Once the ice-cream has fully melted, add to it, the flour, baking powder and salt.
  • Mix well to make a batter. It will be quite sticky.
  • Pour the batter into the prepared pan and bake for 30-35 minutes. Test with a toothpick (it should come out clean.)
  • Allow to cool completely before slicing.

  1. 2 cup melted icecream? Can u tell approximately how much will be 2 cup icecream in weight?

    1. Hi Rashmi, you need to measure 2 cups of ice cream first and then let it melt. I’m not sure what the weight would be

    At what temperature should it be put for baking for 35-49 min? Also preheating at 180c should be done for how long? Also can I use a mix of whole wheat and maida? Thanks so much

    1. Hi Prachi, pre-heating is always for 10-15 minutes depending on your oven. Bake at the same temperature. I would not recommend using whole-wheat in this recipe.

    However, now I am confused.. its not as sweet as a cake but also not as less sweet as a bread 😅😅
