I distinctly remember feeling butterflies in my stomach the moment I heard the words “Tutti Frutti” when I was a kid. There used to be a small local bakery at walking distance from our place. And, every Sunday, I would borrow some twenty rupees from my mom to go there and get a loaf of my beloved tutti frutti cake. If I tell you the truth, not much has changed till today, except that there’s no way we’re going to get a loaf at that price now. This memory is imprinted so deeply in my heart that it made me recreate the recipe and that innocent moment from childhood. Which is why I specifically call this the Bakery style tutti frutti cake.

Tutti Frutti
Tutti frutti are the colourful specks we see in desserts. Basically, it’s a mix of candied fruits that adds both sweetness and a pop of colour to our bakes. Traditionally made from diced and preserved fruits like papaya, cherries, and pineapples, its chewy texture and fruity flavour enhance the overall taste experience, making it a beloved ingredient for many.
 
Tips
The method for this cake is so straightforward that you might already know it. There are a few things that you can do to make the best out of it though. First, if you don’t want the tutti frutti to sink to the bottom during baking, coat them in a bit of flour before folding them into the batter. This will ensure an even distribution throughout the cake. Secondly, don’t skimp on the creaming process—whipping the oil, yoghurt, and sugar until light and fluffy incorporates air into the mixture, resulting in a light, airy texture. And, finally, this is a tough one for me—remember to let the cake cool completely before slicing. This helps it hold its shape and makes for prettier slices.

Bakery Style Tutti Frutti Cake

Bursting with bits of sweet candied fruit and a soft, fluffy texture, this cake is sure to take you back to the good old days of childhood.

Ingredients

  • 160 g Yoghurt
  • 133 g Castor sugar
  • 80 ml Oil
  • 3/4 tsp Baking powder
  • 1/4 tsp Baking soda
  • 2-4 tbsp Warm water
  • 1/4 cup Tutti frutti
  • 1 tsp Vanilla essence (optional)

Instructions

  • In a bowl, add the yoghurt, castor sugar, and oil and whisk all the ingredients well.
  • Next, add the refined flour, baking powder and baking soda and mix well. Add the warm water and mix to combine into a smooth batter.
  • Fold in the Tutti frutti in the cake batter.
  • Transfer the batter to a greased and lined baking tin of your choice.
  • Bake in a preheated oven at 180 degrees Celsius for 25 to 40 minutes or till the toothpick comes out clean.
  • Demould the cake and allow it to cool fully before cutting slices.
