Eggless Sugar-Free Chocolate Walnut Cake

An eggless sugar-free chocolate walnut cake without any refined flour, butter, eggs or condensed milk and sweetened with Stevia that’s super simple to make and delicious to eat.

Kicking off my alternate baking series, I couldn’t think of a recipe more appropriate than a comforting eggless chocolate walnut cake to begin with. It’s got no refined flour, no eggs, no condensed milk and no sugar – yet it makes a super moist cake that hardly feels different than a regular chocolate cake.

The best part about this recipe is that it serves as a great base for building upon. So if you’re looking to make a sugar-free celebration cake too, you could simply use this cake with a bit of frosting and garnishes to make it occasion-appropriate.

It also works great with a variety of flavors – think orange, caramel, butterscotch, berries, etc. and almost all kinds of frostings – from buttercream to cream cheese – although how that would fit into a sugar-free diet I’m not sure of yet. I made it with a simple almond butter fudge frosting, but honestly at the time I was kind of eye-balling it with some left over nut butter I had lying around. So it’s not a recipe that I can share – but I assure you it’s coming soon – along with a ton of other healthy-ish baking recipes on the blog.

Can this cake be made vegan?

The sugar-free chocolate walnut cake can even be made vegan by replacing the milk with water. In which case, you can just add the water and vinegar to the batter separately. However, given that there is no refined flour, or eggs, a little bit of dairy goes a long way in contributing to a rich moist crumb.

What is Stevia?

Stevia is a plant-based extract used as a common substitute for sugar. It is a zero-calorie non-artificial sweetener and completely natural. However, some people are wary of using stevia in baking, and the most common reason I’ve heard is that it makes baked goods bitter. However, in this instance we did not feel any bitterness in the cake and I had a lot of people try it to confirm the same.

If you have any medical issues, please check with your medical practioner about the recommended quantity of stevia that is safe for you to consume. 

A good quality stevia powder is essential to achieve that and you could use any brand of your preference. The one I have used is linked here

Other Sweeteners

If you prefer to not use stevia, you could also make this cake using brown sugar, or jaggery powder – better options to sugar – however, still calorie-rich and not suitable for anybody on a strict sugar-free diet. Over the next few weeks, I will be experimenting with a range of sugar-free alternatives in baking – from fruit purees, to artificial sweeteners to sugar replacements like honey/jaggery. However, when baking for someone on a restricted diet, it’s very important to know the reason for why they can’t consume something. Someone trying to lose weight can still consume some amount of sugar in a day, whereas it can be fatal for a diabetic patient. So before you decide what are the appropriate replacements to use in baking, look at all the options available to you for any particular recipe.

Ingredients

  • 1 cup Whole-Wheat Flour
  • 2 tbsp Cocoa Powder (unsweetened)
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tbsp Instant Coffee optional
  • ¼ cup Oil
  • 50 g Stevia Powder
  • ½ cup Warm Milk
  • ½ tbsp White Vinegar
  • 1 tsp Vanilla Extract
  • ¼ cup Walnuts chopped

  • Grease or line a 6 inch pan and keep aside. Pre-heat the oven to 180° C.
  • Add the vinegar to lukewarm milk, stir and set it aside. It will curdle.
  • Meanwhile, in a bowl, mix together the flour, cocoa, instant coffee, baking powder and baking soda.
  • In a separate bowl, mix together oil, stevia powder, and the vanilla.
  • Slowly start adding the dry mix and buttermilk, alternating with each as you whisk. Stop when you have a smooth lump-free batter. Fold in the walnuts, reserving a few to add on the top.
  • Pour the batter into the prepared pan and top with the remaining walnuts.
  • Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.

    1. Hi Mrunal, I haven’t tried this recipe with date syrup but I guess you will have to balance for moistness as well by reducing the liquid. You could use jaggery powder instead more easily

    Poija big fan of your recipes .
    I tried the atta Sugarfree stevia choc cake
    Whilst mixing I found the batter to be dry .
    I took 140 g atta and rest as per the recipe exact too . Don’t know what went wrong .
    Please advise . After baking the cake was crumbly . Thnks in advance .
