Recipe – Mint and Lemon Cookie

Ingredients

For Cookies-

  • Salted butter – 113 grams
  • Powdered sugar – 50 grams
  • Mint leaves – 1 tbsp (finely chopped)
  • Lemon zest – 1⁄4 tsp
  • Castor sugar before adding – 10 grams
  • Refined Flour – 115 grams
  • Lemon juice – 10 ml

For Lemon Glaze-

  • Icing sugar – 100 grams (sifted)
  • Lemon juice – 15-20 ml

Instructions

  1. In a bowl, add finely chopped mint leaves and lemon zest and rub it with 10 grams of castor sugar and keep it aside.
  2. In another bowl, whisk together butter and sugar.
  3. Then add mint leaves and sugar mixture to the bowl.
  4. Add lemon juice to form a soft dough.
  5. Roll into a log and freeze it for minimum 30 minutes.
  6. Cut and bake at 160°C for 13 minutes as shown in the video.
  7. For the glaze, take 100 grams sifted icing sugar, add 15-20 ml of lemon juice, whisk together, pour into a piping bag, and drizzle on the baked cookies.
