Healthier oats and Carrot cake
A wholesome and moist cake made with oats, carrots, and bananas—naturally sweet and perfect for a guilt-free treat. Enjoy it as is or with a simple cream cheese glaze.
Recipe – Healthier Oats and Carrot Cake
Ingredients
- 120 ml Milk
- 20 grams Castor Sugar
- 45 ml Oil
- 50 grams Oats Flour
- 50 grams Rolled Oats
- 2 tbsp Medium ripe bananas
- 70 grams Carrot (grated)
- 1 tsp Cinnamon
- ½ tsp Baking Powder
- 35 grams Walnuts
Instructions
- For this cake, use rolled oats as well as oats flour, made at home by grinding instant oats in a blender.
- Add cinnamon powder, sugar, baking powder, grated carrots, and oil.
- Mash two over-ripe bananas and add them to the mixture.
- Add milk to adjust the consistency of the batter and fold in walnuts.
- The batter may not look great at this point, but it comes together nicely.
- Bake until a skewer comes out clean.
- Top with your favorite frosting or enjoy as is; an easy cream cheese glaze with mini sugar carrots works beautifully.
- Cut a slice and enjoy!
