Egg-Free One Bowl Mango Biscoff Cake

Recipe – Egg-Free One Bowl Mango Biscoff Cake
Ingredients
- Milk – 1/2 cup (120 grams)
- Mango puree – 2 1/2 tbsp (40 grams)
- Oil – 2 1/2 tbsp (40 ml)
- Castor sugar – 1/3 cup (75 grams)
- Flour – 1/2 cup (70 grams)
- Baking powder – 1/2 tsp
- Biscoff – 2 tbsp
Instructions
- In a bowl, whisk together milk, castor sugar, and oil.
- Add mango puree (store-bought or homemade) and whisk well.
- Mix in flour and baking powder until you get a smooth batter.
- Add spoonfuls of Biscoff into the batter; swirl or leave it in the middle as
desired. - Microwave the bowl on high for 1 1/2 to 2 minutes, or until a skewer comes
out clean. - Serve with additional chopped mangoes and Biscoff on top.
- For a plain mango version, skip the Biscoff.
