Recipe – Egg-Free One Bowl Mango Biscoff Cake

Ingredients

  • Milk – 1/2 cup (120 grams)
  • Mango puree – 2 1/2 tbsp (40 grams)
  • Oil – 2 1/2 tbsp (40 ml)
  • Castor sugar – 1/3 cup (75 grams)
  • Flour – 1/2 cup (70 grams)
  • Baking powder – 1/2 tsp
  • Biscoff – 2 tbsp

Instructions

  1. In a bowl, whisk together milk, castor sugar, and oil.
  2. Add mango puree (store-bought or homemade) and whisk well.
  3. Mix in flour and baking powder until you get a smooth batter.
  4. Add spoonfuls of Biscoff into the batter; swirl or leave it in the middle as
    desired.
  5. Microwave the bowl on high for 1 1/2 to 2 minutes, or until a skewer comes
    out clean.
  6. Serve with additional chopped mangoes and Biscoff on top.
  7. For a plain mango version, skip the Biscoff.
