Mint and Lemon Cookie

Recipe – Mint and Lemon Cookie
Ingredients
For Cookies-
- Salted butter – 113 grams
- Powdered sugar – 50 grams
- Mint leaves – 1 tbsp (finely chopped)
- Lemon zest – 1⁄4 tsp
- Castor sugar before adding – 10 grams
- Refined Flour – 115 grams
- Lemon juice – 10 ml
For Lemon Glaze-
- Icing sugar – 100 grams (sifted)
- Lemon juice – 15-20 ml
Instructions
- In a bowl, add finely chopped mint leaves and lemon zest and rub it with 10 grams of castor sugar and keep it aside.
- In another bowl, whisk together butter and sugar.
- Then add mint leaves and sugar mixture to the bowl.
- Add lemon juice to form a soft dough.
- Roll into a log and freeze it for minimum 30 minutes.
- Cut and bake at 160°C for 13 minutes as shown in the video.
- For the glaze, take 100 grams sifted icing sugar, add 15-20 ml of lemon juice, whisk together, pour into a piping bag, and drizzle on the baked cookies.
