Healthier oats and Carrot cake

Recipe – Healthier Oats and Carrot Cake

Ingredients

  • 120 ml Milk
  • 20 grams Castor Sugar
  • 45 ml Oil
  • 50 grams Oats Flour
  • 50 grams Rolled Oats
  • 2 tbsp Medium ripe bananas
  • 70 grams Carrot (grated)
  • 1 tsp Cinnamon
  • ½ tsp Baking Powder
  • 35 grams Walnuts

Instructions

  1. For this cake, use rolled oats as well as oats flour, made at home by grinding instant oats in a blender.
  2. Add cinnamon powder, sugar, baking powder, grated carrots, and oil.
  3. Mash two over-ripe bananas and add them to the mixture.
  4. Add milk to adjust the consistency of the batter and fold in walnuts.
  5. The batter may not look great at this point, but it comes together nicely.
  6. Bake until a skewer comes out clean.
  7. Top with your favorite frosting or enjoy as is; an easy cream cheese glaze with mini sugar carrots works beautifully.
  8. Cut a slice and enjoy!
