Eggless Mango Pound Cake
A soft, buttery pound cake bursting with tropical mango flavor – perfectly moist and egg-free, ideal for tea-time or dessert.

Ingredients
- 90 ml Milk
- 10 ml Vinegar
- 150 grams Castor Sugar
- 80 grams Oil
- 30 grams Yogurt
- 1 tbsp Lemon Zest
- 160 grams Mango Pulp
- 190 grams Refined Flour
- 25 grams Custard Powder
- 1.5 tsp Baking Powder
- ½ tsp Baking Soda
Instructions
- First, make the buttermilk by combining warm milk and vinegar.
- Next, add yogurt, sugar, and oil, and whisk everything together.
- Then, add lemon zest and mango pulp, and combine well.
- Finally, add the flour, custard powder, baking powder, and baking soda, and make a smooth batter.
- Pour the batter into a Bundt pan (you can also use a loaf pan or round baking pan).
- Bake at 180°C until a skewer inserted comes out clean.
