Eggless Mango Madeleines

Soft, buttery, and egg-free Madeleines infused with mango — perfect on their own or paired with a cup of coffee or chai!

Recipe – Eggless Mango Madeleines

Ingredients

  • Yogurt – 60 grams (1⁄4 cup)
  • Castor sugar – 100 grams (1⁄2 cup)
  • Milk – 80 grams (1⁄3 cup)
  • Mango pulp – 40 grams (2.5 tbsp)
  • Refined flour – 140 grams (1 cup)
  • Baking powder – 3⁄4 tsp
  • Baking soda – 1⁄4 tsp
  • Melted butter – 56 grams (1⁄4 cup)

Instructions

  1. Combine yogurt, milk, and sugar in a bowl.
  2. Add mango pulp for flavor. Alfonso mango pulp is preferred, but any variety works.
  3. Add flour, baking powder, and baking soda, and combine well.
  4. Finally, add melted butter to the batter — this gives Madeleines their signature hum.
  5. Brush your Madeleine pan with butter and pipe out the batter into each cavity.
  6. Bake until a skewer comes out clean.
  7. Enjoy as is with a dusting of icing sugar, or dunk in chai or coffee!
