Coconut & Mango Tea cake

Ingredients
- Milk – 60 ml (1⁄4 cup)
- Castor sugar – 125 grams (1 + 1⁄4 cup)
- Oil – 60 ml (1⁄4 cup)
- Mango pulp – 50 grams
- Refined flour – 120 grams
- Coconut powder – 40 grams
- Baking powder – 1 tsp
- Baking soda – 1⁄4 tsp
Instructions
- Combine milk, sugar, oil, and mango pulp.
- Add flour, desiccated coconut, baking powder, and baking soda, and mix into a
smooth batter. - Bake at 180°C until a skewer comes out clean.
- Top the cake with whipped cream and additional mango pulp, swirling to create a
pattern using a skewer. - Garnish the edges with toasted coconut flakes.
