Ingredients

  • Milk – 60 ml (1⁄4 cup)
  • Castor sugar – 125 grams (1 + 1⁄4 cup)
  • Oil – 60 ml (1⁄4 cup)
  • Mango pulp – 50 grams
  • Refined flour – 120 grams
  • Coconut powder – 40 grams
  • Baking powder – 1 tsp
  • Baking soda – 1⁄4 tsp

Instructions

  1. Combine milk, sugar, oil, and mango pulp.
  2. Add flour, desiccated coconut, baking powder, and baking soda, and mix into a
    smooth batter.
  3. Bake at 180°C until a skewer comes out clean.
  4. Top the cake with whipped cream and additional mango pulp, swirling to create a
    pattern using a skewer.
  5. Garnish the edges with toasted coconut flakes.
  6. Cut yourself a slice and enjoy!
